A little history π
This combo is ancient peasant food, but Lyon in France gave it a name. Lyonnaise potatoes are potatoes, boiled and then sliced and shallow-fried, served together with fried onions. The term Γ la lyonnaise β in the style of Lyon β generally means onions are a key part of the recipe.
