Keto Cheesy Focaccia (Easy Pan Version)

🥣 Ingredients

  • 1 ½ cups shredded mozzarella
  • 2 tbsp cream cheese
  • 1 cup almond flour
  • 1 large egg
  • 1 tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp dried oregano (or Italian herbs)
  • Pinch of salt

🌿 Toppings

  • 2 tbsp olive oil
  • 2 tbsp grated parmesan
  • ½ tsp dried rosemary or oregano
  • Optional: olives, cherry tomatoes, or chili flakes

🍳 Instructions

  1. Preheat oven
    Set your oven to 200°C (400°F).
  2. Melt cheeses
    In a bowl, combine mozzarella and cream cheese. Microwave for 60–90 seconds, stirring halfway, until melted and smooth.
  3. Make the dough
    Add almond flour, egg, baking powder, garlic powder, herbs, and salt.
    Mix until a dough forms. Knead lightly with your hands if needed.
  4. Shape it
    Grease a small pan or skillet (20–23 cm).
    Press the dough evenly into the pan.
  5. Create dimples
    Use your fingers to press small holes across the surface.
  6. Add toppings
    Drizzle olive oil over the dough.
    Sprinkle parmesan and herbs. Add any extras you like.
  7. Bake
    Bake for 12–15 minutes until golden and slightly crispy on top.
  8. Cool & serve
    Let it cool for a few minutes, slice, and enjoy warm.

  • Want it crispier? Bake 2–3 minutes longer.
  • For a richer flavor, brush with garlic butter right after baking.
