- 1 Β½ cups shredded mozzarella cheese
- 2 tbsp cream cheese
- 1 cup almond flour
- 1 large egg
- 1 tsp baking powder
- Β½ tsp garlic powder
- Β½ tsp dried Italian herbs (or oregano/thyme mix)
- Pinch of salt
Topping:
- 2 tbsp olive oil
- 1β2 tbsp grated parmesan cheese
- Extra herbs (rosemary, oregano, or thyme)
- Optional: sliced olives or cherry tomatoes
π³ Instructions
- Melt the cheese
In a microwave-safe bowl, combine mozzarella and cream cheese. Microwave for about 60β90 seconds, stirring halfway, until fully melted and smooth. - Mix the dough
Add almond flour, egg, baking powder, garlic powder, herbs, and salt. Mix well until it forms a sticky dough. (It helps to knead it slightly with your hands once it cools enough.) - Prepare the pan
Lightly grease a small baking pan or skillet (around 8β9 inches / 20β23 cm). - Shape the focaccia
Press the dough evenly into the pan. Use your fingers to make small dimples across the surface (classic focaccia style). - Add toppings
Drizzle olive oil over the top, then sprinkle parmesan and extra herbs. Add olives or tomatoes if you like. - Bake
Bake atΒ 200Β°C (400Β°F)Β for 12β15 minutes, or until golden brown. - Cool slightly & serve
Let it rest for 5 minutes before slicing. Best served warm!
